Breast cancer affects 1 in 8 women. I know, because it happened to me--no family history, out of the blue (and into the pink). A year later, after a mastectomy, chemo and radiation, I am still here. I'm thriving, surviving and living out from under the shadow of cancer.

Ysolei's Salmon Patties

It's very hot out and I'm indoors more because the radiation has really affected my skin. Thank God for silvadene cream.  Bummer, but once I'm healed, I'll be back to my walks around Manhattan.  Still feel great by the way.

I wanted to share my favorite recipe for salmon patties.  I had these last night for dinner with grits and a salad. Absolutely delicious and a rich source of omega-3's.  You can make this recipe lighter by using egg whites, light mayonnaise and baking the patties at 350 degrees for 45 minutes, instead of frying.  I prefer them pan fried to enjoy the crispy coating--yum!

I hope you enjoy these--they are hands down, one of my favorite comfort foods!
